Palo Cortado is an oenological rarity that blends a delicate and elegant nose with a great deal of body and structure on the palate. Made from a single variety of Palomino grape, it is a very exclusive wine.   FOOD PAIRING Goes well with Spanish goods like ham or pork loin and fried almonds. Second-to-none when combined with mojama or maruca (dried salted tuna) or smoked fish like cod. Fresh and semi-cooked foie gras, oysters, sea urchin, salmon sashimi and sushi made from delicate fish like amberjack or butterfish go extremely well with Palo Cortado. For this lord of wines, the exquisite selection of musts and their settlement in solerajes with multiple American oak criaderas that allow them to be bottled in limited series is essential. This amontillado is a benchmark for good winemaking practice. Made from a single variety Palomino grape, it uses an ageing process in American oak barrels, soaked in wine by the soleras system, firstly as fino under flor a veil of yeast and then, and for a longer time, without it. Due to the large number of scales, this step results in a subtle evolution of its organoleptic properties.       This exceptional oloroso with a very prolonged ageing using the traditional soleras and criaderas system is the outcome of a special selection of wines from particular Palomino grape vineyards. Aged in barrels with longstanding experience in keeping exceptional wines of the same style, the result is this unique and complex oloroso with its high concentration of bouquets. This exceptional oloroso is the result of prolonged ageing in wood and in contact with the open butts of must from the wine proceeding from a Palomino grape that never had a yeast coat. Many years as a vintage, and many more under the criaderas and soleras system produce the effect found in this wine, with a mahogany colour with copper tones and a nose of notes of nuts, toasted and balsamic notes, a sweet aroma and highly evolved vinosity. In the mouth, it is velvety, powerful and harmonious, with great retronasal qualities and persistence, all due to the concentration of its components, which after more than forty years of ageing result in this intensity and complexity of aromas. This wine, carefully created by our winemaker, breaks moulds as the blend of our youngest Pedro Ximénez -with its fresh raisin notes- and our much older dry Oloroso results in a highly original and authentic combination. At the same time, it’s a very pleasant wine to drink and a perfect companion for many dishes, ranging from the most obvious desserts to more daring combinations.       A very special and exclusive sweet wine made from a selection of grapes of the same name, properly dehydrated in the sun and turned into wine using artisan methods. Aged under the traditional system of soleras and criaderas over many years in American oak, it is a creamy, velvety wine with a balance of non-cloying sweetness and refreshing acidity. Pedro Ximénez is obtained from the grape variety of the same name, left in the sun to dry. A very sweet must is obtained during the winemaking, the fermentation of which is paralysed by fortification, and the result is a wine which, after prolonged ageing by the soleras system, has a very dark ebony colour with dense iodine tones, dried grape bouquets and toasted tones with caramel and honey. In the mouth, it is creamy, velvety, flavoursome, with great persistence and a balanced sweetness. A traditional wine with a limited production.       A brandy over 25 years old... complex but amiable. This brandy is the upshot of blending excellent distillates called holandas and spirits (aguardientes), aged for years in American oak barrels that previously contained oloroso sherry, currently more than twenty-five years old on average. It is classified as Solera Gran Reserva, although this designation does not contribute much to the ageing of our products, as it is granted to any brandy that certifies an ageing of more than three years. Today, it continues to be aged in American oak barrels that formed part of the soleraje of our VORS Tradición Oloroso wine. The complexity of this brandy is well-known, but its amiability, both in nose and mouth, makes it a very tempting yet simple drink for people not initiated in brandy appreciation. The spicy bouquets - with cloves and nutmeg - toasty notes from noble old wood, roasted and pipe tobacco, with a heart of liqueur chocolate, invite you to sample it. It is a good companion for dark chocolate, medium to strong Havana cigars and nuts. For bolder tastes, it is highly recommendable with certain types of cheese, like Idiazábal. The ideal temperature for tastings during winter is from 16ºC to 18ºC, but we recommend against serving it in a brandy snifter to avoid the concentration of alcohol. If possible, a tulip glass would be ideal and, if not, a Burgundy red wine-style glass.

Our Platinum brandy is the culmination of more than half a century of ageing in sherry barrels from holandas and spirits of extraordinary quality that were the result of Palomino grape distillation many years ago. This quality is reflected in the vinosity and cleanliness of its intense bouquet, while it also shows the influence of the wines previously aged in the barrels that now conserve this brandy, American oak that stored Pedro Ximénez-style wine of unparalleled quality. While enjoying this exceptional brandy, you will find toasted notes of nuts, aromatic herbs and spices, cinnamon, liquorice and tobacco. The strength of its flavour is well-known, starting out semisweet, dry and bitter at the same time. Its extraordinary length in mouth is unimaginable. This is a brandy for restful enjoyment, but combines perfectly with dark chocolate, cocoa beans and medium to strong Havana cigars. In an attempt to obtain a container worthy of the quality of this brandy, a bottle was designed following original models from the Real Fábrica de Cristal de La Granja, an institution that preserves the most traditional glass-making methods and is recognised worldwide for its cultural and artistic value, as well as for having been a supplier to the Spanish Royal Household since the eighteenth century. The development of the bottle we use and its production are exclusive to our winery, being blown and hand-carved in accordance with La Granja production standards. Each piece is unique, with sales limited to 500 bottles per year, labelled and numbered by hand.
